The first written recipe for a Whisky Sour was included in The Bartender's Guide by Jerry Thomas in 1862. The original 'Sour' was very easy to make: spirits, water, sugar, lemon, ice. It was only in 1922 that the great Anglo-Belgian bartender Robert Vermeire suggested that "a few drops of white of egg improve all Sours". Thus the beautiful white layer was added to the sour.
